Make this quick and dirty with a decent frozen pie shell and shredded cheese from a bag. Your friends will be just as satisfied—and you won’t have to wash the cheese grater.

Yields4 Servings

ingredients
 1 pie shell, ho-made or store-bought
 1 cup sautéed sliced mushrooms, spinach, or whatever vegetables, cooled
 4 slices bacon, cooked, cooled, crumbled (optional)
 2 cups shredded Swiss, cheddar or whatever cheese
 ½ cup sliced green onions
 4 eggs
 1 cup heavy cream
 1 tsp sea salt
 ½ tsp pepper
 ¼ tsp ground nutmeg

Get your uncooked pie shell together, layer it with some good sautéed mushrooms and spinach, maybe a half an onion, cooked bacon—whatever looks good or needs eating, and the shredded cheese and green onions.

Crack those eggs into a mixing bowl, whisk or fork them until they're blended and maybe a little bit frothy, and stir in the cream, salt, pepper, and nutmeg. Pour over the filling.

Bake at 350°F about 40 minutes, until lightly browned on top. Don't freak out if the thing puffs out of its shell—once it's finished, take it out of the oven and place on a rack. It will calm down.

Wait until the quiche cools just a bit to cut it, or don't, nbd.
