A few ingredients are kind of critical for fried rice, in my opinion: toasted sesame oil, scrambled eggs, ginger, and rice, of course. That said, put whatever the hell you want in your fried rice, just remember that the enemy of fried things is water. Use a big, very hot wok, cook food in a single layer, and leave some space for the demon steam to escape.
Leftover takeout rice is perfect for frying, but so is day-old rice you made yourself and fresh rice that’s on the dry side. I like to use fresh vegetables, but last night’s dinner is often the inspiration for tomorrow’s fried rice. Use ingredients you like and have at hand, don’t let me tell you what to put in your wok.
